Summer grilling and dining al fresco definitely go hand in hand. Here’s two recipes that won’t disappoint. First a delicious marinade for pork tenderloin. And for dessert, healthy strawberry ice using the season’s abundance of fresh berries.

MARINATED PORK TENDERLOIN

2 pork tenderloins, about 3/4-1lb each
1 inch piece fresh ginger, peeled & minced
1 jalepeno seeded & minced
1/4 tsp crushed red pepper flakes
1/3 C honey
3 Tbsp soy sauce
3 Tbsp sesame oil

Place pork in a heavy plastic bag. Add remaining ingredients. Seal bag and refrigerate 2 hours or overnight (longer the better!)

Broil or grill 8-10 minutes, turning once and basting with reserved marinade.

Let sit 10 minutes before slicing.

 STRAWBERRY ICE

1 pint/pound of fresh strawberries hulled & halved
3/4 cup of sugar
1 cup water
2 Tbsp fresh lemon juice

Simple syrup: Combine water and sugar. Bring to boil and stir until sugar is dissolved. Chill to at least room temperature.

Puree berries in blender. Add sugar syrup and lemon juice until combined.

Pour mixture into container for freezing.

To serve allow dessert to thaw a bit then scoop into the perfect little dish. Garnish with a dollop of whipped cream.

Another idea…..using a small scoop, place in stemmed drinking glass. Add your favorite white wine or champagne.
